Hasselback Diced Bacon Potato

Hasselback potatoes are a better way to make a baked potato! It allows you to get more flavour throughout the potato as well as give it deliciously crispier edges.   • Russet Potatoes
  • Salted Butter
  • Vital Potato and Vegetable Seasoning
  • Bacon
  • Cheddar Cheese
  • Salt


  1. Dice and cook bacon. Reserve for later.
  2. Wash potatoes and poke holes in them with a fork or skewer and microwave for 10 minutes (depending on size), rotating half way through.
  3. Slice potatoes using Charcoal Companion Hasselback Potato Slicing Rack.
  4. Make a little raft out of foil to hold potatoes.
  5. Salt in between potato slices and put onto grill/in oven at 400F on indirect heat.
  6. Melt butter and mix with Vital Potato and Vegetable Seasoning and baste potatoes every 20 minutes.
  7. Use a skewer to test the doneness of the potatoes. When you can pull the skewer out cleanly, it is time to add diced bacon and shredded cheese.
  8. Continue until cheese is melted. Remove and serve.
