Hours of preparations for certain cuts and styles of smoking are well worth it.  In this “Smoking” session at Barbecue U, Chef Niko and Chef Rene, will introduce you to the simple and the complex nature of the smoke.  From a fun rich decadent appetizer to the serious process of the “Rib” you will leave with a bundle of tricks and ideas which can be easily replicated at home.

Equipment:

The Traeger Timberline 850 for constant heat and smoke for long and short smoking. The Crown Verity Mobile unit with cold and hot smoke for a delightful cheese dish. Primo Ceramic unit for the smoked and grilled chicken dish. The Weber Summit unit for apple smoked smoke belly.

 Menu:

  • Prosciutto wrapped Brie cheese apple smoked
  • Chipotle seasoned pork belly hickory smoked
  • Butterflied chicken maple wood
  • Beef ribs cured and smoked with simple baked beans, grilled peppers 

 LCBO licence with service of wine and beer included in course fees
